Description: A Tuscan name for butter beans or Lima beans. The butter bean or lima bean is a large, creamy-coloured, sweetish-flavoured bean with a soft floury texture when cooked. When dried this bean keeps for a long time. They are particularly good in mixed bean salads and in rich meaty stews. High in potassium. Butter beans are large and white, while sieva beans are smaller and greener and are used a great deal in the United States.
