Description: A sort of cross between a pancake and an omelette with a variety of ingredients. For example, in Liguria you may find it made with sardines or anchovies. It is usually sliced like a cake and often served cold. Similar to Spanish tortilla. Like tortilla it is cooked for rather longer than the classic French omelette.
