Description: Patagonian toothfish. Patagonia toothfish is a fish with a taste similar to swordfish and tuna, it is a deep-water fish from the Southern Atlantic and Southern Ocean. Sold in England as Antarctic sea bass and Antarctic ice fish. It has large, moist and tender flakes and is very good grilled or poached. Raw, the flesh is snow white and keeps its colour when cooked, looking similar to cod. The average weight of a commercially caught Patagonian toothfish is 9 to 10 kilograms (20 to 22 pounds) with large adults occasionally exceeding 200 kilograms (441 pounds). It is a slow-growing fish which may live for up to fifty years and to reach a length up to 2.3 metres (7.5 feet). Patagonian toothfish feed largely on squid, fish, and prawns,which informs their own delicious flavour, and, in turn, constitute a large part of the diets of sperm whales, Southern Elephant Seals, and colossal squid. This fish is becoming endangered through overfishing.
