Description: A soft but firm, mild, creamy, fresh rindless cheese with wmooth white paste named after the province from which it originates. It is made from a mixture of cow and sheep’s milk, sometimes with goat's milk. It has the appearance of a drum-shaped Mozzarella and is often eaten as a dessert served in thick slices with honey and walnuts. It is sometimes brine-washed.
