chanfaina

Language: Catalan

Description: A stew eaten on the day of the killing of a pig. It includes the lungs, lights, head and liver. However, pollo en chanfaina is something quite different, being chicken in samfaina sauce, a Catalan sauce made with tomatoes, onions, aubergine (US: eggplant), courgettes (US: zucchini) and peppers. Made with bacalao and pork as well as chicken. It may also be a stew of goat's offal (US: organ meat) in a thick sauce.
