Description: "Cock's crest." Cockscomb. The crest of a cockerel, soaked in cold water and skinned. The soaking is continued until the blood has drained out. It is then poached in chicken broth and lemon before being put to whatever use is required, such as garnishing elaborated dishes, often with cock's kidneys.
