Description: Stuffed pasta squares, half moons or ovals with serrated edges. Traditionally they are filled with spinach and ricotta over which the dough is folded. They are made with egg pasta. In Tuscany they may be small dumplings similar to gnocchi while in Emilia-Romagna they may be stuffed with marzipan or jam. They are one of the oldest recorded uses of stuffed pasta.
