Description: A sort of savoury pancake mix or custard made with eggs, strained through a fine sieve or colander into hot fat. As it hits the fat it breaks up into little pea-sized pieces. It may be made using consommé, which it most frequently appears in as a garnish, for the fluid. Alternatively it may be flavoured (and coloured) with other savoury items such as spinach, truffle or tomato to enhance the consommé with which it is served.
