Description: A fresh or slightly ripened cheese made with cow’s milk and shaped like a pumpkin or a bishop's mitre. It has a fiery, piquant paste with a slightly granular texture a thin, white mould rind. It is made on farms in Asturia. This cheese is made with raw milk. If rubbed with paprika, creating a deep orange rind, it is called Rojo del Aramo.
